If with test of servers you mean button "Test connection" on settings page then it doesn't matter how many connections you have configured as during test only one connection is established. "no longer works" isn't very specific. Does the script end with success or failure status? Any (error) messages from the script in the log?

Anyway, you can create another account and use it to send e-mails.

For post-processing scripts there is no difference. Whether the streaming continues to work after unpack is finished depends on video player software. Nzbgetweb was an add-on providing web-interface, which isn't necessary since nzbget 9.0 released in 2012.
You need to install nzbget newer than 0.8 and you'll have what you want. For installation instructions see download page (link at the top of this page).

Nzb-Files are saved in directory set by option QueueDir. You can open nzb-files in a text editor and inspect their content. That allows you to determine whether nzbget downloads less than requested or the files sent by CP contain less data than you expect.

Change NzbDir to something else. That's for a case if some program puts new files there.
