Hi
Im new to nzb's and after a little help. Ive got shows downloading and although many have downloaded the size is showing as grey and the time left just shows seconds. its still downloading new ones but never seams to unpack them or put them into my complete folder
any idea what i doing wrong?

Check the messages tab. There might be errors reported.

There are messages like :
Error reading diskstate: could not open file N:\Torrents\nzb\queue\5357: No such file or directory
i get a message to say something has succesfully dowloaded but nothing appears in my completed folder

The message means the download queue is corrupted. Someone has deleted files from QueueDir.
Make sure QueueDir is on local disk which is always attached.

how do i get around it? is there a way to fix or do i need to delete all the downloads and start again?

Delete all from queue (move into history), then in history select items you want to download (click on first item, then shift+click on last to select range) and choose "Download again" via button "More" on toolbar.

Pity it doesnt re-download the missing files though.
Is there a way for them to save in other directories. i.e. tv shows saves in complete/TV and movies save in complete/movies?

You can set categories for downloads and each category can have its own DestDir. Or use
VideoSort for fully automatic renaming and sorting.
